Simple Work From Home Recipes: Spicy Tuna Sandwiches

When it comes to convenience, there’s really nothing that can top the humble sandwich. Here’s a mathematical equation to prove why the sandwich is the king of simplest recipes to make:

A sandwich dish is such an easy thing to prepare, yet it also provides all the necessary nutrients to keep you hard at work all throughout the day. And only a few ingredients (that have already been outlined in our highly complex mathematical equation above) are needed to complete this quick and easy sandwich filling mix in less than 15 minutes.

As for the protein component, this particular sandwich calls for tuna as its main source since tuna is full of useful nutrients as well as essential fatty acids. To boost the spice index a little, along with an additional helping of plant-based protein, the recipe also uses spicy beans in the mix. This may seem like an odd choice as Asian recipes tend not to include such an ingredient, but trust us, you’ll be blown away by the depth of flavour these spicy beans will provide to your otherwise ordinary lunch sandwich.

Now that all of the components have been decided, all that’s left is to pick the bread of your choice — white, whole grain, sourdough, etc. Though, we’d suggest opting for the healthier stuff if you’re tracking your calories and your waistline.

2 cans of tuna in oil (olive, sunflower) that has been drained

1/2 cup mayonnaise

2/3 cup chopped spicy beans

2 stalks celery, finely chopped

 2 tablespoons spicy bean brine

1 tablespoon chive, minced

1 tablespoon butter

2 slices of bread of your choice (white, whole grain, wheat, or sourdough)

Cooking Instructions

  1. In a small bowl, drop in your tuna, mayo, spicy beans, celery, brine from the can of your spicy beans, and chives. Combine all the ingredients well. Add salt and pepper if needed. That is your sandwich filling mix.
  2. If you intend to toast (optional but recommended) your bread before assembling, generously butter one side of the bread and press on to a hot, oiled pan/skillet. Sear for a minute or two or until golden brown then take it off the heat. Take the two slices of your bread of choice then spread the prepared tuna filling on it. Serve the sandwich on a plate immediately to preserve crunchiness. Alternatively, you may also place the sandwich in a sandwich bag and store it in your fridge if you’re preparing in advance.
  3. For the optional ingredients, you may add any amount of vegetables like cucumber, tomatoes, avocado, and so on. Otherwise, cheese and bacon may also be tacked on to your sandwich for a highly decadent meal.
